No vegetarians here

I've been too busy to blog the past couple of days, so there are a few things I want to blog about! Don't worry - one thing is about food, so you will like that part. If there is one thing I have learned in my five years on facebook, it's that people are far more likely to comment on your status/post if it relates to food. You could make the most creative, odd, or funny status ever and not get any comments, but just mention that little four letter word and the next thing you know, you have people salivating on your profile (even more so if pictures are included). I suppose the same is true for blogs. But I digress ...

You can look at Matt and me and know we like to eat. While we were working in the yard Tuesday morning, a young man stopped in front of our house to sell us some steaks. You know what this guy was thinking when he pulled up. "Now I KNOW these two could wolf down a steak or two!" He talked really fast, mentioned his mother having cancer, and wanted to show us his steaks. While he was telling us about his magnificently cheap steaks, I thought about telling him we were vegetarians. I'm not sure what stopped me the most - the fact that it was a lie, or the fact that we clearly didn't look like the healthy type who'd be vegetarians. Fortunately, he accepted our "no thanks" after we said it a couple of times.

Since we weren't able to gorge ourselves on cheap steaks from the back of a pickup truck, we decided to try out some homemade chicken barbecue pizza. When I was younger, I sometimes experimented with foods, usually bake good items, to make what I called "special recipes." If what I cooked was a "special recipe," you quickly learned to stay away from it! Now days, I don't have "special recipes" but I have improved on just trying out new things.

Matt and I love chicken barbecue pizza, particularly from Johnny B's or Papa John's. One of his co-workers mentioned using a Pillsbury pizza crust for their homemade pizzas, so we wanted to try it. Here's what it looks like:


I cut up some onion the night before, and we already had a pack of pre-cooked chicken on hand that I was planning to use for chicken fajitas. I really recommend this brand:


The pizza crust was really easy to make. You pop the can open (my favorite part! - I love that sound) and spread it across a greased cookie sheet. We spread barbecue sauce in a thin layer across the crust. Sprinkled almost a whole pack of mozzarella cheese on top, added the chicken that we broke up into smaller strips and glazed it with a little barbecue sauce, and added the onions. Then we added the rest of the pack of cheese. It was done baking in 13 minutes.

Man, oh man ... it was GOOD! Here's how it turned out:



We will definitely be making some again in the future.

That's my food tidbit for the day. I've decided to dedicate this post solely to food. Food truly deserves its own post anyway. I'll put what else I wanted to talk about in the next post and put off a few other things until later on!

  1. How is the Pilsbury crust? We use Chef Boyardee pizza crust (just add water to make the dough). The crust is really delicious and has an amazing yeasty flavor, but it's such a pain in the neck to roll out.

  2. Christy, we were impressed with how the crust turned out. It was just the right amount of thickness (though I think Pillsbury makes a thicker crust as well) and tasted good. It seemed a little on the dense side, but not too much so. I would give it a try and see what you think. It was only $2 something. Much easier than mixing with water!

  4. Hey, I have a wonderful idea. Ashley made it for me the other day but you can only do it if you like hot wings. It's a buffalo pizza. Just take chicken breast marinade in hot sauce (she used Texas Pete) bake it in the sauce til it's done. Shred the chicken up. Put a thin layer of sauce on your crust, then a thin layer of ranch dressing... add your chicken, drizzle some more sauce and add mozzarella cheese... bake til the cheese is melted. Really simple, really good.
